Easy healthy food has been my mantra more than ever since I banged my head and got a brain injury. Subsequently, I’m always searching Instagram for yummy healthy food. Dishes like homemade baked beans and 3 layer peanut chocolate bars with no sugar both jump out to me and instantly I am a fan of One Busy Mother aka Becci Beale.

Your weekly meal plans on Instagram are really inspiring when I am looking for ideas. What inspired you to start posting them on Instagram?
Hi Jade, Firstly I agree with you that parenting is definitely easier when surrounded by supportive like minded people, I believe we can all learn from each other and support each other through the most important job ever, that is the main reason I wanted to start my page. I have been a mum for nearly 17 years and I’ve learned so much along the way having my four children, if I can help other parents, by being real, honest and helpful, it makes me happy.
I started sharing my meal plans as I think we can all get stuck in a same food every week rut. I wanted to inspire people to try new things and to show that cooking simple, healthy family meals does not need a 2 page long ingredients list and 3 hours preparation time! Healthy isn’t hard you just need to be organised and prepared.
Do you find it is easier to make healthy food if you meal plan and how do you decide what to make?
I find it easier to stay on track being healthy if I meal plan, no spontaneous naughty fridge binges. Also I know my children are getting what they need and meals are balanced and nutritious. It saves money and time to meal plan as you buy what you need and have reduced waste and you don’t get the kiddies asking you every 5 seconds what’s for dinner. I sit every Sunday, meal plan the week, I get the family involved, Ask them what they fancy, I use the internet and my millions of recipe books to help me, then I do an online food shop to be delivered Monday, stick my meal plan on the fridge and get ready to eat some yummy dinners with the family, which is one of my most favourite times of the day.
What is your go-to meal when you have had a busy day and want to make something quick?
I love Wholemeal wrap pizzas, they take seconds to make and who doesn’t love pizza? You can add peppers, Spinach, Feta, Olives … whatever you like and just grill them for a few mins. It works with Pittas, bagels and muffins or crumpets too. I also love a quick stir fry, a splash of Tamari Soy sauce and some honey with chicken or Prawns, yummy.
Can you share with us your favorite sweet treat that is not that naughty?
My favourite Sweet treats are my Vanilla Protein Bars, Made with Oats, peanut butter, maple and Vanilla Protein Powder they are so good and my most liked recipe so far. My kids love them too, they taste so naughty but are so nice. Or my coconut chocolate fudge .. I could name more, I love sweet treats but I always find the healthiest way to make them.
You are in great shape and invite your IG followers to join you on your 21-day programs can you tell us more?
I meal plan the 21 days for my clients, I suggest supplements and protein powders to assist their healthier lifestyle, I also get them access to a private facebook group with daily live workouts and support. I am also on hand to help them the full 21 days with healthy snack ideas, Lunches as well as dinners.
By the end of the 21 days participants will definitely be feeling full of energy, less bloated and happy. Exercise and healthy food makes you feel so good, it’s got me through some very mentally challenging times. We all have the same hours in the day, and I believe looking after yourself is a priority ( so you can then look after everyone else 🙂 I hope to keep supporting, inspiring and being a friend to anyone that needs me xx
